Here’s how you make one of my favorite fine chopped salads, Turkish Ezme Salad.
You will need:
2 cups finely chopped roma tomatoes 4-5 pieces
1 cup of finely chopped red and green peppers *you can just use red pepper
3/4 cup finely chopped sweet onion
2 tbsp finely chopped parsley
1/2 tbsp finely chopped Serrano pepper
1/2 tbsp finely chopped garlic
1 1/2 tbsp tomato paste
1 tbsp lemon juice
1 tbsp pomegranate molasses
1 tsp salt
1 tsp Aleppo pepper
1/2 tsp black pepper or I like to use allspice
Preparation:
You’re going to chop all your vegetables very finely. You can use the food processor. I used a knife to do the job, because when your knife is super sharp and handles well, chopping becomes the most fun part about making the dish.
You need to strain the veggies from all extra liquid. Add to a bowl and add the seasoning, lemon juice, pomegranate molasses and tomato paste. Mix well and serve with just about anything.

Let’s make Turkish Esme salad. I’m addicted to this salad lately. I add it to chicken, beef, kebabs. You can add it on top of cheese, lemon. It’s amazing on top of eggs, on its own with freshly baked bread. And boy, is it healthy. It’s super nutritious and good for you. You want your vegetables chopped super super fine. You can actually use the food processor for this, but it’s also super fun to use a very sharp knife. So, maybe I’m showing off just a little bit my new monogrammed knife from New West Knife Works. So, stunning and fun to work with. Make sure to strain the vegetables from all extra liquid. Two cups of the strained Roma tomatoes go in. 3/4 cup of onion. One cup of red and green bell peppers. One tablespoon of the garlic srano pepper mixture. Two tablespoons of parsley. One tablespoon of lemon juice. One tablespoon of pomegranate molasses. This is not traditional, but I’m adding one tablespoon of tomato paste to intensify the flavors. Season with salt, Aleppo peppers, black pepper or I like to use all spice. Mix very very well. A drizzle of olive oil on top and serve with anything you like really. Give it a try. recipe in the caption.
