    I think it might be a flavoured salt. Some places served tempura with salt to dip on the side as an alternative to tsuyu for those who prefer a ‘cleaner’ taste.

  2. Could be shio kosho, which is a mix of salt and pepper and I think sometimes other spices as well.

    I think it might be kombu salt, powdered kombu (kelp) mixed with sea salt.

    Some kind of tasty salt. Dip sone pieces of meat into it to taste a difference between dipping it into sauces.

  8. I went to one where they gave us truffle flavoured salt. I only realised it was truffle flavor after asking but then the taste was super obvious

    If it’s not salt as others are saying, I’d guess grated chestnuts. I had it with a kaiseki dish in Kyoto.

    Definitely some kind of salt. I’ve only had matcha salt for tempura while in Japan but this might be another type of salt.

    OP, did that taste citrusy or like savory seaweed (Umami)? Color me intrigued! I’m about to head to my local Japanese grocers: Tokyo Central and Mitsuwa Marketplace.

  16. That’s most likely yuzu salt a citrusy finishing salt that’s common with tempura. Adds this bright kick.
