Am I wrong in thinking this is horrifying and 100% not safe? Iirc you have to pressure can meat (which I'm pretty sure they have the set up for), but it shouldn't be exposed like that, right? Either way my mom and I have decided it looks disgusting and will not be partaking in this monstrosity. My dad keeps getting offended on his friend's behalf every time my mom and I imply it doesn't look safe.

  3. I can confirm that canned venison looks similar to what you’re seeing. Once you get it out of the jar and heat it all your visual hangups should be gone. All that said, the valid concern here is whether the friend used an approved pressure canning recipe since there is risk of severe illness otherwise.

    I worked with a guy that ate canned moose. They did it in a water bath canner. His family has done it that way for generations and no problems.

    I told him that this is an excellent way to kill everyone all at once and that he should only follow laboratory proven canning methods and follow to the letter. He looked at me like my head was made of cheese.

    While yes all meat has to be pressure canned, all meat does shrink on processing and does leave a bigger gap sometimes not producing enough liquid from cooking to keep the meat covered. None of my raw pack chicken stays covered, no worries there.

    If the liquid is still halfway up the jar it is considered safe, though that is right on the line. I’d use it as soon as possible and make sure the contents are boiled for five minutes. I’d add extra liquid for that step, obviously.

    I think any canned meat looks disgusting. What you are seeing looks totally normal tho. I’ve canned deer meat before and it too looked gross 😂

    Venison is very low fat. This is what it usually turns out like when you raw pack and pressure can as directed by safe canning recipes. Or at least thats how mine usually turns out. These days I try to really stuff the jars full. That helps it look less empty and scary.

    I think it looks normal for canned meat. It tends to absorb the juice and the jar can look pretty empty as a result. Look at recent posts. I think there was one similar post a couple days ago by the person who canned it and was concerned by disappearing liquid.

    I eat canned venison, and this looks similar to what we make every year.

    If it were me, I would ask their canning method to be safe.

    And that’s why I never give people any canned goods, except perhaps some fruit jams or jellies. It always looks way too friggin’ sus if you don’t know exactly how it was processed.

    This looks somewhat normal to me. I have never had the meat shrink so much and so much siphoning (loss of liquid) occur but that doesn’t mean it isn’t good and safe. I’ve always read that as long as a safe process was properly followed and the jar still has half the meat submerged it’s all good.

    My jars always have some meat above the fluid line, there is always liquid to the shoulder of the jar.

    At first glance, I would avoid because the ring should have been removed. Also like others have mentioned you don’t know if they followed the correct process. I have canned beef and the liquid level is very much like what this is too.

    We just pressure canned moose a couple weeks ago and I can confirm that it looks very similar to what you have in that picture. I know it looks odd, but it’s probably the most tender, tasty deer you’ll ever eat!
