    Sorry about the hollows. How fresh are they? That’s the kind of marginal hollow which might fill in as they mature (as long as they haven’t already). Keeping them in containers with lids as they sit in the fridge will also help, cuz otherwise the refrigerator will sap moisture and make the tops more brittle
