




Prime brisket from Sam’s Club. Started out at 18.60 lbs. I wanted to cook this on my Weber Kettle or Weber Smokey Mountain but even after the trim it was way too long. Ended up having to throw it on my Weber Searwood. I cooked it on Smoke Boost mode (180 degrees) and then upped the temperature 20-25 degrees every few hours until it finished. Max temp was 300. Took about 23 hours unwrapped the whole way. Pulled at 195ish, wrapped in foil with tallow and rested in a 150 degree oven for about 20 hours. Amazing brisket!

Shiiiid I’d have that on the table in under 12 hours with the rest. Hot and fast, good rest, you just gotta pull at the right temp.
