Chef Luca Manfe shows us how to make a traditional Sicilan classic: pasta con le sarde. This is a wonderful dinner idea that utilizes all of those delicious cans of sardines in our pantries.
pasta sard. You know, I just came back from a beautiful vacation in Sicily, and this one, it’s a very typical Sicilian dish. I know that maybe not everybody likes sardines, but this pasta is made for people who don’t like sardines. Mustard beans are so good for you. Rich in omega3, calcium, protein. They are delicious and nutritious. Dill is a very important flavor for this pasta. So, let’s cook it for a few minutes. Keep the water cuz you’re cooking the pasta in it. Saffron, we’re going to toast it and then cover it with some water. For the sauce, we need anchovies, onions, and garlic. The dill goes in and the saffron water. Nice handful of pine nuts and raisin. Long pasta are the best for this dish, but remember to always break them. Just joking. Let’s add the sardines to the sauce. Pasta dente.
