🌿 Pesto Sandwich Recipe

For the Fresh Pesto:
*2 cups fresh basil leaves
*1/4 cup pine nuts
*1/4 cup grated parmesan cheese
*2–3 garlic cloves
*1/4 tsp salt
*3 tbsp olive oil

For the Roasted Cherry Tomatoes:
*3 garlic cloves (peeled)
*1 cup cherry tomatoes
*Olive oil (enough to drizzle)
*1 tsp salt
*1 tsp ground black pepper
*A drizzle of balsamic vinegar

Preheat your oven to 335°F (170°C).
Place cherry tomatoes and garlic cloves on a baking tray. Drizzle with olive oil, sprinkle with salt and pepper, and add a touch of balsamic vinegar.
Bake for 30–35 minutes, until tomatoes are soft and slightly caramelized.

For Assembly:
*Bread of your choice (sourdough, ciabatta, or multigrain work well)
*Fresh mozzarella (sliced)
*Roasted cherry tomatoes
*A pinch of black pepper
*A pinch of salt
*Mixed salad greens
*Optional: extra balsamic vinegar drizzle
