



Smoked with hickory pellets @225 till temps reached 170F ~3hrs, wrapped with butchers paper and pulled @205, mixed blue hogs smokey mountain bbq with raspberry chipotle and applied on ribs to glaze for 45mins at 350.
Oh and pulled the sausages at 160 ~2.5hrs. Finished up on the gas grill to crisp.

Probes in ribs is unnecessary. Not enough meat, too many bones. It’s not a brisket. 3 hours on smoke, wrap for an hour, take em out.
Idk but I know I’d kill two of those racks and attempt the third….
At the end of the day, all that matters is if you enjoyed both the journey and the outcome. They do look good!
For ribs, I’ve stopped wrapping though and just cooked them at 250 with a 50/50 ACV/apple juice mist every 30 mins. Then just wait for them to pass the bend test. Turn out great every time for me.
What is that on top rack next to the sausage?
That is a lot of temp probes. LoL I think you’ll find that with practice things like Ribs and Sausages you won’t really need the probes, you’ll just know when to flip or wrap or when they are just done.
And the next time you do ribs do yourself a favor and find or mix yourself a really good dry rub and smoke em up and when they get a nice color and they are nearing done warp em up with a few pats of real butter. No sauce at all. Try it on one rack, or a half rack. I’ve gotten a lot of people that have eaten my ribs to jump on the no sauce wagon.
There’s an updated recteq that has a third layer. Definitely would give you more room.

Use the bend test for ribs, and no wrap. At about 3 hours when they have a mahogany color and the meat is pulled back from the bone, pick them up with tongs in the middle and give them a bounce. If the skin/bark cracks they are good to go. AmazingRibs.com is the best smoking guide there is
