Hi. Today I’m making spinach and ricotta canaloney. Spinach and ricotta canalone. Not using the tubes. I’m using lasagna. This is my absolute favorite. First job is to make the sauce. Start by softening your onions. Then add your garlic. Add in your two tins of tomatoes. Then the tomato puree. Then add your water. I’ll add in a little sugar. I’ll season that with salt and black pepper. I’ll cover that and let it simmer for 30 minutes. I’m just going to do a little taste. That’s perfect. I stir in the fresh basil now. I’ll put that to one side to cool. Sweat your spinach for 2 or 3 minutes. Pat dry the spinach. Chop up your spinach and put it in the bowl. Add in your ricotta and mix it all together. Soak your lasagna in boiling water until they’re soft. Pour a third of your sauce into the dish. Pat dry your sheet. Put in your filling. Then roll it. Place them on top of your sauce. Cover with the remaining sauce. Add your mozzarella. Then the parmesan. In the oven for 20 to 30 minutes. That’s it. Out the oven now. Can’t wait to tuck into it. I just love this sort of grub. Oh, baby. I’m so excited and I just can’t hide it.
