This looks incredible! The color on that soup is amazing. Roasted poblano peppers are so underrated for meal prep because they add so much flavor without needing a ton of ingredients.
How long does the soup last in the fridge for you? I always find that pepper based soups hold up really well for 5-6 days, way better than cream based ones.
Also curious about your fall harvest bowls. What components do you usually prep? I’m always looking for good vegetarian bowl combos that don’t get boring by day 3.
