S&P, 3,3,3 (…but alternating 1 minute per side, and +30 seconds a side, cus he was a big boy).
On stainless (sorry) with just a touch of oil.

    I’d be mad at myself bc it’s a little overcooked for me, but I’d still eat it and enjoy it. The sear looks fire tho.

    Honestly? Not really. I’ve seen way worse but word to the wise: practice on cheaper cuts until you nail your process. More salt for starters. Higher heat. Less moisture on the meat before it goes in the pan. Try cooking with some tallow as well.

    For the thick boys, I prefer to go with a reverse sear. But this looks fine. Other than the gray band, I would have crisped up the side fat. I eat that as a pre-dessert.

    Looks good. I would go a little hotter on the sear and lighter on the finishing heat. I’m a rare guy though. Would eat at a gathering with no complaints.

    I don’t think you got real crust on the meat itself. Just burnt seasoning. Salt it only before the cook. Season after

    I’d say a good medium with a nice crust. Would probably stand it on its side to sear the front on on the third pic but that’s just my preference. Will devour in 2 minutes.

    Looks perfect to me. I love a pink center. I could go a little less, but for me definitely not overcooked.
