My all time favorite soup- Pasta Fagioli 🤌🏼
• 1/2 cup of celery
• 1/2 cup of onion
• 1/2 cup of carrot
• 1.5 cups of flavor bomb tomatoes
• 1 tbsp of EVOO
[heat EVOO in a large pot, add diced veg & saute until tender]
• 1/2 lb of ground beef
[add ground beef & continue to cook through]
• 3 cups of chicken broth
• 1 cup of tomato sauce
• 1/4 cup of grated parmesan
• 1 can (15 oz) of cannellini beans
• season: salt, pepper, basil, oregano, crushed red pepper flakes, thyme & bay leaf
[mix & let simmer for 30 minutes]
• 3/4 cup of ditalini pasta
• 2 cups of kale (stemmed & torn)
[bring to a boil, stir in pasta & kale then lower back down to simmer. Cook until pasta is al dente (about 7 minutes)]
I love a hearty soup, if you prefer more broth add an extra cup or two. Serve with some crusty bread so you can soak up every drop 😋
