Let me show you how I did it. Start by cutting Yukon potatoes into cubes, dicing an onion, and mincing garlic. Add chopped bacon to a Dutch oven and cook till crispy and remove and set to the side. Use the bacon fat to brown the hot Italian sausage. Once fully cooked, remove and set to the side. Next, add in your onions. Season with salt and pepper and saute till soft. Add in the minced garlic and saute till fragrant. Then, pour in chicken broth. in water. Bring this to a boil. Then add in the potatoes and cook for about 10 minutes until they become fork tender. Add the sausage back to the pot along with the chopped kale. Let this simmer for a few minutes until the kale wilts. Then add in half of the bacon. Now lower the heat and stir in the heavy cream. Add in a little Italian seasoning and garlic powder. When you’re ready to serve, top the soup with the bacon pieces and grated parmesan and serve with garlic bread.
