    That looks amazing. There’s a specific way to cook pecan with the fat cap folded and all you use is kosher salt when the fat cap is a golden brown that’s when you thin slice it put salt back on and then put it back on the rotisserie. I got the method from a Carrasco cookbook in that fat cap is so important to the roasting of the picanha.
