



tried Beaufort, Societe Roquefort and Tine Brunost! i feel so blessed…
the last time i tried a local artisan brunost (last picture) the taste and texture was not as smooth as this one!! tine gudbrandsdalen is really caramelized and elastic, like werther caramels but definitely less sweet.
though i’m a blue cheese fan through and through i have never tried original roquefort in my life. my country imports danish blue mostly… this was a bit saltier than danish and sweeter than stilton. the funkiness is actually similar to turkish blue cheeses. i would say it’s mostly close to gorgonzola but roquefort is wetter like feta!! incredible!! i think the reason why the blue veins are green-ish is due to moisture… very interesting!!
lastly, beaufort. i heard that this one is very similar to comte… but in my experience beaufort has a very distinctive barnyard flavor in it. it is stronger but less piquant like emmental. yes you do catch a bit sweetness in the beginning but when your nose and taste buds catch up you realize the nuttiness is more on the boozy side. i’m pretty sure it would go well with onions and martini.
over all, i enjoyed so much trying these. hopefully i will fly to europe one day to try other cheeses i have never tried!!

Gudbrandsdalen and other Brunost is so nice. I almost class it as a separate food product to all other cheeses! I’ve not tried the really strong ones, but the lightest / sweetest one (Flotemysost) is almost just like fudge.
