Fabio Trabocchi does nothing in half-measures. His vision of Italian cuisine spares no expense and considers every last detail. A native of Italy’s Marche region, Trabocchi first made his mark in the D.C. metro area at now-closed Maestro at the Ritz-Carlton in Tysons Corner, and from there, he opened a constellation of restaurants in the city. Georgetown’s coastal Italian–focused Fiola Mare and Spanish cousin Del Mar in The Wharf have glam waterfront dining covered, while tasting menu destination Fiola is designed for special occasions, and the approachable Sfoglina brings fresh pasta to three D.C. neighborhoods.
