My MiL told me I could harvest her tomatoes before the frost while she's away.

What can I do with them ? Can I cook them in any way or help them mature ? I would hate to throw them away…

I live in southern France.

  1. Place those in a box, lined with newspaper, and a couple of bananas or apples for a few weeks.

    Bananas and apples emit Ethylene gas which will ripen your tomatoes.

    If you place them upside down on your counter they’ll ripen on their own! Just check on them every day or so because they ripen surprisingly fast. I just made tomato soup with mine! There’s also a lot of recipes for green tomatoes although I’ve never tried any

    Box lined with newspaper, couple of bananas – leave the semi ripe tomatoes in with them, dry and cool spot and they should ripen in a few days. You will need to keep an eye on them

    Those that dont ripen but are still hard, then you have green tomato chutney.
    There are lots of recipes for it out there but I’ve found adding a couple of chillies gives it a nice kick, and goes great with Gammon/Ham especially around christmas and new year

  4. I would split the larger ones, leave the small ones whole and pickle the whole bunch.

    Pickles!!! In mediterranean, we love to make them pickles. These semi-riped tomatoes are really a good fit, just find a good recipe.

    If you don’t want to wait for them to ripen or it doesn’t work:

    – shakshuka is nice with green tomatoes
    – generally fried or roasted sliced green tomatoes is a lovely side and can be done with diff combos/recipes
    – green tomato chutney
    – salsa

    Try using a few of the large half ripe ones for fried green tomatoes. Which are better is not really all green. You slice, then bread, then fry. Yum! There is even a movie “Fried Green Tomatoes.’

    I make piccalilli relish with my 1st frost green tomatoes. Its a crowd pleaser.
