    Highly recommend spatchcocking your turkey-
    The surface area being better distributed makes for a fantastic cook.
    That said, this bird of yours looks wonderful.

    Doing a 24 pound one this week for TG. Freeze after cutting. I have done this for about 15 years and it’s always great. Also deep fry a 15 pounder…

    Is that a L or M? I have a large and 14-15 lb bird is pushing the space amount. Spatchcocking would also take more space too so just consider that before you get too far along.

    I like to hollow out my turkey. Smokes faster. Use the drip pan to make the gravy, with chicken stock.
