    I enjoy pickled or fried. Many of those will eventually ripen if you leave them on the counter or in a paper bag.

    pickle them. lots of recipes online.

    I threw a bunch of green tomatoes in a ferment with green cayenne for a hot sauce.

    You can substitute roasted green tomatoes for tomatillos in salsa verde. You can freeze the salsa verde in containers for about 6 months, or you can just freeze the roasted green tomatoes and pull them out when you want to make a fresh batch.

    Green tomato curry. I make the version from the “Mangos and Curry Leaves” cook book, but you can find other versions online. I sometimes poach some white-fleshed fish in mine.
