This is my first time ever smoking any kind of meat, my buddy ended up talking me into it. I had bought a offset smoker grill without knowing it was a smoker (got it because it was on special and didn't know the difference) what do you guys think? Any tips? The cook lasted me approx. 11 hours.

    Let it rest longer so it’s not steamy. Take pics with it pulled and not just the outside.

    It looks good and I’d eat the hell out of it. Personally I prefer more of a bark on it. It looks like you may have wrapped it to rest which caused the steam to make the park a bit soggy and possibly even fall off in some spots?

    My tip is to apply a rub more generously. Use a rub that has some texture rather than just fine powder. Both these steps will make better bark

    Solid first attempt. Try butcher paper instead of foil when you wrap next time. My experience has been that foil is a little bit too good of an insulator and steams the mean too much and washes away bark or just makes it too gelatinous. YMMV but after probably 70-80 pork butts, I only use a 50/50 kosher salt and pepper rub and don’t be shy about it. You will get great bark from that.

    Thank you guy’s for your tips! New to the game so will definitely take all this into consideration. Will be trying ribs this Friday so I’ll take better pics for sure this time around!
