This October, Shangri-La celebrates the timeless art of Italian cuisine through a journey that marries flavour, heritage, and hospitality. Chef Simone Loisi, Head Chef at The Waterfall Ristorante Italiano in Shangri-La Singapore, will bring his distinctive Southern Italian sensibilities to India for a special culinary residency at Shangri-La Bengaluru from October 24 to November 2, 2025.
The initiative represents more than a guest chef showcase; it is a reflection of Shangri-La’s global culinary philosophy—one that values authenticity, craftsmanship, and cross-cultural connection.
Hailing from Puglia, the sun-drenched region of Southern Italy, Chef Simone’s cooking is grounded in simplicity and sincerity. His dishes celebrate the purity of ingredients and the stories they carry, while his menus balance rustic warmth with refined execution. At The Waterfall, he has reimagined Italian dining in Singapore, earning acclaim for his signature creations such as handmade pastas, fresh seafood, and slow-cooked family recipes.
Dishes like Burrata Pugliese, Pollo al Rosmarino, and Branzino baked in salt crust have cemented his reputation for crafting cuisine that is both soulful and sophisticated.
Now, Chef Simone brings this philosophy to India—not as an export, but as an exchange of cultures. “India’s energy and appreciation for food mirror the Italian way of life. We share a belief that food is about connection, conversation, and emotion. My goal is to bring a little piece of Puglia to India, expressed through the Shangri-La way—warm, generous, and refined,” says Chef Simone.
His visit exemplifies Shangri-La’s belief that dining is a bridge between people and places, a shared experience that transcends geography and language.
For Shangri-La, the collaboration reaffirms the brand’s commitment to curating extraordinary dining experiences across its global portfolio. From Michelin-starred restaurants to intimate chef residencies, the brand continues to use gastronomy as a medium to express its signature hospitality.
“Bringing Chef Simone to India reflects our dedication to creating meaningful culinary narratives. This residency is an invitation to experience Shangri-La’s philosophy, where every dish carries a sense of place, purpose, and emotion,” says Rahul Joshi, General Manager, Shangri-La Bengaluru.
Chef Simone’s residency coincides with Taste of Shangri-La, a global celebration that unites chefs, ingredients, and inspirations from across the brand’s destinations. His presence in India during this festival underscores Shangri-La’s commitment to intercultural collaboration and culinary storytelling that extends beyond the plate.
At the heart of Chef Simone’s craft lies a deep devotion to pasta—handmade each day, shaped with care, and paired with sauces that evoke the soul of Southern Italy. Each dish curated for his Bengaluru residency embodies the Italian spirit: heartfelt, honest, and timeless.
Guests can look forward to an experience that brings together the warmth of Puglia, the refinement of Shangri-La, and the enduring joy of food that tells a story.
