This Italian Spaghetti Frittata (Frittata di Spaghetti) is the best way to use leftover pasta – crispy on the outside, soft inside, and ready in just a few minutes!

It’s a traditional recipe from Naples, simple, cheap and unbelievably tasty. Perfect for lunch, dinner or even cold in a lunchbox!

🧾 Ingredients:

250 g cooked spaghetti (leftovers work perfectly)

3 eggs

50 g grated Parmesan or Pecorino

1 tbsp olive oil or butter

Salt & pepper to taste

Fresh parsley (optional)

👩‍🍳 How to Make It:

In a bowl, whisk eggs, cheese, salt and pepper.

Add spaghetti and mix until fully coated.

Heat olive oil in a pan and pour in the mixture.

Cook on low-medium heat until golden and crispy.

Flip and cook the other side.

Serve hot or cold – both are delicious!
