• In a large pot, heat 2 tbsp olive oil. Sauté 1 chopped onion and 2 garlic cloves for 5–7 mins.
• Add 2 bay leaves, ½ cup rice, stir to coat.
• Pour in 5 cups Massel Chicken Stock and add 2 chicken breasts. Simmer covered for 20 mins, stirring occasionally.
• Blend 1 bunch parsley, 1 tbsp olive oil, and 2 tbsp lemon juice into a drizzle.
• Remove and shred chicken. Whisk 2 eggs with remaining lemon juice, slowly add 6 ladles of soup to temper.
• Pour egg mix into pot, add shredded chicken, stir and top with parsley drizzle. Season to taste.
