love this! grew up eating mujadara, minus the pasta- that addition is so odd to me, a levantine arab, but i’m sure it’s delish!
Im a vegetarian who spent several months in Misr a decade ago and I still make koshari at least once a month. Phenomenal! It doesn’t sound like a knock your socks off dish but the spiced tomato sauce and crispy onions elevate the whole thing to another level.
