Ingredients:
1½ cups whole wheat or chickpea pasta
1 tbsp olive oil
3 garlic cloves, minced
½ onion, chopped
1 cup spinach or kale
1 cup cherry tomatoes, halved
¼ cup Greek yogurt (or silken tofu for vegan)
½ tsp paprika
½ tsp black pepper
Salt to taste

Hey everyone. Today we are making creamy garlic veggie pasta using chick pasta. It’s healthy, flavorful, and so easy to make. Start by boiling water with a pinch of salt and a splash of oil. Add your pasta and cook until al dente. In a pan, add chopped onions, then olive oil, and three minced garlic cloves. Add one cup of half cherry tomatoes, half a teaspoon paprika, and cook until the tomatoes are soft. Then stir in 1 cup of baby spinach. Next, add 2 tablespoons of Greek yogurt and cook for a minute or two. Season with salt to taste. Finally, add the cooked pasta and toss in everything together until creamy and delicious.
