INGREDIENTS

▪️350g sweet potatoes, cubed
▪️1 whole cauliflower, cut into small florets
▪️570g chickpeas
▪️Spices: 2 tsp cumin, salt, pepper,
▪️1 tbsp oil
▪️150g Couscous
▪️150g rocket

Dressing: 3 tbsp Greek yoghurt, juice from 1/2 lemon, 1 tsp honey, 3 cloves of garlic minced, salt and pepper

METHOD

▪️Preheat oven to 200c
▪️In a roasting tray add your cauliflower, sweet potatoes, chickpeas, spices and oil. Mix well
▪️Roast fit 35-40 minutes
▪️Make couscous as per packet instructions
▪️In a small bowl mix together the dressing ingredients
▪️In a salad bowl add couscous, rocket, roasted vegetables. Pour dressing and mix well. Top with feta cheese (optional)
