    I had this older dude that wanted to learn how to cook professionally

    Took him on at admittedly a really good rate because I respected he was doing it “for fun” but was willing to bust ass

    For like 2 weeks straight I had him in prep splitting brussel sprouts. Every day he’d come in and go “what am I learning today?”

    Still brussel sprouts bro hahahaha we’ll throw you on a station soon but this is a big part of professional kitchens. Sometimes you’re just doing mindless bullshit but you better be consistent or you’re going to fuck up service later on
