-4 Large Bell Peppers (Red, Yellow, Orange)
– 1 Cup of cooked brown rice or quinoa
– 1/2 cup of canned chickpeas (low-sodium)
– 1/4 cup of diced tomatoes
– 1/4 cup of chopped cucumbers
-1/4 cup of crumbled feta cheese
– 1/8 cup of chopped olives
– 1 Tbsp of olive oil
– 1 Tbsp of lemon juice
– 1 Tsp of dried oregano
– 1/8 cup of fresh parsley, chopped
– Black pepper (optional)

Hi, welcome to Faithfully Prep. This is episode 23. We are doing a high blood pressure friendly meal today. Mediterranean stuffed bell peppers. Let’s get into it. All right, you guys. So, you’re first going to need four large bell peppers, 1/8 cup of olives, 1/4 cup of diced cucumbers, 1/4 cup of diced tomatoes, 1 tbsp of lemon juice, 1 cup of cooked brown rice, 1 tbsp of olive oil, 1/4 cup of crumbled feta cheese, 1 tbsp of dried oregano, 1/8 cup of fresh parsley, and a half a cup of canned chickpeas, low sodium. So you first want to add in your brown rice, then your chickpeas, your diced tomatoes, your cucumbers, your feta cheese, your olives, your olive oil, your lemon juice, your parsley and oregano, your pepper, which is optional. Then you want to stir this all together. Very simple, very easy. You’re going to stuff your bell peppers, preferably to the top if you can. If not, it’s okay. It’s not that serious. And then you’re going to place foil. You’re going to place in the oven at 375 for 35 to 40 minutes. And y’all, there we have it. Oh my gosh. Let’s go. Let’s go. All right, y’all. Let’s try this out. My god. Oh sh. Okay, y’all. Okay. Honestly, this is a really good meal. I think you guys will like it. I like the brown mix. Oh my gosh. around the rice mixture. I think it’s a good alternative for something like when you’re craving something without meat. So, it’s a nice balance. Super flavorful. I think you guys will like it.
