Got fresh blackberries. Let’s turn them into a warm jammy cobbler with a golden biscuit topping. You’ll need six cups of juicy and sweet blackberries. I add lemon zest and juice to brighten the flavor of the filling. Whisk together sugar, cornstarch, lemon zest, cinnamon, and salt. Add the blackberries, lemon juice, and vanilla. Stir until evenly coated. I make the cobbler by combining flour, sugar, baking powder, salt, and baking soda. Toss in cold butter and cut into p-sized pieces just like making biscuit dough. Stir in the buttermilk. The topping should be very thick. My son says it looks like ice cream. Grease a 9-in baking dish with butter. Then spread the filling into the dish. Drop two tablespoon size mounds evenly on top of the filling. Combine sugar, cinnamon, and ginger. Sprinkling spiced sugar on top boosts browning and adds a sweet, crunchy finish. Bake at 400° until golden brown and the filling is hot and bubbly. About 30 to 35 minutes. You’re going to love it, especially with a scoop of ice cream.
