    If you have a cast iron pan, try cooking the fish with seasoning and no fat if you want to see some serious blackening. That said, I’d eat the shit out of this.

    Jacques Imo’s blackened Redfish is legendary so I respect this very much. That said, agreed you gotta skip the nonstick and go for a cast iron. A good lodge is like $20
