Hey friends!
Here are some photos of meals from the past few days – tonight I’m roasting a NY Strip loin roast and I’m so excited. The other day at Costco, I bought a 14 lb. NY Strip loin ($9.99 a lb) and cut it into 8 thick steaks, and a roast- that way our freezer would be stocked with steaks since we eat so much beef in our household. Anyways, on to the dinners!
Fourth photograph is breakfast for dinner – scrambled eggs and bacon – ain’t much explaining going on here!
Fifth photo was a fabulous dinner from the other night – NY Strip steaks with truffle-garlic butter sauce, pearled couscous, and roasted bacon and balsamic Brussels sprouts. I recently began enjoying truffle flavor so I purchased white truffle oil at Costco. It added a really savory flavor to the dish, and the steak had a nice fat-cap and was perfectly cooked and rendered. Better than a steakhouse if I do say so myself.
Sixth and final meal photograph is of last night’s super-simple Chicken Fajitas. I use chicken breast and a bunch of spices, and a variety of sweet peppers + onions. Served simply in some wheat tortillas with homemade guacamole. Would’ve done rice but did not want an extra dish. So tasty.

First two pictures are of my homemade Eggplant Parmigiana- this was a solo dinner, and I made chicken for my fiancΓ© as he claims he does not like eggplant.. however, my plate looked so good that he did try a few bites and said it was not bad “for eggplant”. I always order it at restaurants but to be honest I love making it myself. I used a combo of fresh and canned tomatoes for the sauce, and added fresh ricotta and pecorino between the layers.
Third photograph is Rotini with Vodka Sauce. Vodka sauce is my fiancΓ©s favorite food and he said this was the best he’s ever had. He’s an honest food critic and said it almost hurt to admit it is better than his favorite restaurant. I normally use pancetta, but only had bacon so used that. It came out great. I did meatballs with it, which were good but a bit too lean imo.

Seventh pic is of the soon-to-be 11 week old Maple Pumpkin! My fabulous mini dachshund who I just love taking photos of.
