The Waldorf Astoria Texas Hill Country, expected to open in Fredericksburg in 2027, has added a well-known name in food to its lineup.

Chef Dominique Crenn of three Michelin-starred Atelier Crenn in San Francisco will develop and oversee the luxury property’s signature restaurant.

Crenn is not a stranger to Texas. Last year, the French-born chef was tapped to lead the culinary program at Cafe Dior, a small dining room inside a Dior store at Highland Park Village in the Dallas area. The cafe serves expensive, dainty and stunning food inspired by the designs of Maison Dior.

“With Chef Crenn, we aim to further elevate Fredericksburg’s identity as a leading wine and culinary destination by creating experiences that feel local, inspired and enduring,” said Mark Harmon, developer of Waldorf Astoria Texas Hill Country, in a prepared statement.

Dino Michael, senior vice president and category head of luxury brands at Hilton, said in a statement the group behind the property is “creating a destination that reflects the spirit of Texas Hill Country while advancing the next chapter of luxury dining.”

The second-floor restaurant at the Waldorf Astoria from Crenn, who was the first female chef in the U.S. to earn three Michelin stars, is expected to serve a mix of seafood and “meats.” It’s unclear what those meats will be. Crenn’s Cafe Dior menu focuses on vegetables and seafood, with only a few dishes that incorporate chicken. A beef filet was recently added to the menu as well.

The high-end Hill Country property, featuring 60 hotel rooms, 37 resort villas and 50 residences, will be built less than a mile from Fredericksburg’s downtown, which has changed markedly over the past 15 years.
