📝 RECIPES
Falafel
2 cups dried chickpeas (soaked overnight)
Fresh cilantro & parsley
3–5 cloves garlic
1 onion
1¼ tsp salt, 1 tsp cumin, 1 tsp paprika, ¼ tsp black pepper
2 tsp baking soda
2 tbsp breadcrumbs
Oil for frying
Falafel Sauce
Yogurt, tahini, lemon juice, garlic, pinch of salt
Yellow Arabic Rice
Rice (soaked 30 min)
Butter & olive oil
Whole spices: dried lime, cinnamon stick, cloves, bay leaves, cardamom
Minced garlic & ginger
Turmeric & salt
200 ml chicken stock or water
Turkish İskender Kebab
Thinly sliced meat, marinated with grated onion, salt, pul biber, black pepper, olive oil, milk
Cooked in olive oil
Tomato Sauce
Butter & olive oil
Tomato paste (3 tbsp)
Diced tomatoes (1-2 cups)
Salt, black pepper, chili flakes, paprika, minced garlic
Water (1–2 cups)
Crispy Bread Cubes
Bread, sliced into small cubes
Butter, stir-fried until golden
Serving
Layer bread cubes, pour tomato sauce, place meat on top, more sauce, yogurt on the side

Hello friends, how are you today? I hope everyone is doing well Today is extra exciting because I’m trying something completely new,
cooking Arabic food for the very first time! We’ll be making crispy, golden falafel Quick tip before we start: Make sure to soak 2 cups chickpeas in water overnight
(or at least 8 hours) so they’re soft and perfect for the falafel mix. We’ll also need cilantro, parsley, 3–5 cloves garlic, and 1 onion cut into small pieces Now, put cilantro, parsley, garlic, and onion into a blender.
Start blending everything together Now, add 11/4 teaspoon salt, 1 teaspoon paprika, 1 teaspoon cumin,
pinch of black pepper, and 2 teaspoons baking soda to the blended mixture Adding 2 Tbs of breadcrumbs to the mixture.
This will help the falafel hold its shape while frying Now, take a small amount of the mixture and shape it into balls Heat oil in a deep pan over medium heat Gently drop the falafel balls into the hot oil Fry until they turn crispy and golden brown Now, let’s prepare the falafel sauce In a small bowl, add yogurt, tahini, lemon juice, garlic, and a pinch of salt.
Mix well until the sauce becomes smooth and creamy Now it’s time to enjoy! It was really good. I’m so happy with how it turned out Tonight, I’m making something special for dinner,
Turkish İskender kebab and yellow Arabic rice My friends are coming over, so I really want everything to turn out perfect Before we start cooking, soak 2 cups of rice in water for 30 minutes Now, in a pot, melt some butter and add a little olive oil Next, we’ll fry a few whole spices: dried lime,
a cinnamon stick, cloves, bay leaves, and cardamom Fry the spices for about 30 seconds to bring out their aroma.
Then add minced garlic and ginger, and fry them for 1 minute Now add the soaked rice into the pot, then add turmeric and salt. Fry it gently for a minute. Now, pour in 200 ml of chicken stock or water if you prefer. Simmer the rice until the water evaporates.
Then cover the pot and cook it on low heat for about 15–20 minutes Now we will be making the tomato sauce for iskender kebab
In a pan, heat 2 tablespoons of butter and olive oil. Add 3 tablespoons of tomato paste and fry for 4–5 minutes Then add 1–2 cups diced tomatoes, salt, black pepper, chili flakes, paprika, and minced garlic Close the lid and boil for 5 minutes Finally, add 1–2 cups of water and stir to combine Slice the bread into small cubes Stir-fry the cubes in butter until they’re golden and crispy I forgot to film preparing the meat since I was a bit in a hurry, the guests were waiting! 😀 So here’s the recipe: Slice the meat thinly (I used sirloin stake) and use juice of one grate onion,
Add 0.5 tbsp salt, 1 tsp pul biber, 0.5 tsp black pepper, 0.5 tsp olive oil, and 200 ml milk Mix well and marinate in the fridge for 5 hours or overnight
When ready, fry the meat on both sides in olive oil until cooked through Now, on a plate, place the crispy bread cubes firs and
Pour some tomato sauce over the bread Next, place the cooked meat on top and add more tomato sauce Finally, serve with yogurt on the side for a creamy finish Thank you so much for watching!
