a leak and potato soup with crispy bacon dice up your bacon nice and fine add a dash of oil to a dutch oven or sauce pan add the bacon and Fry until you have a fond in the pan dice up some carrot onion and celery also wash and dice up some Lea remove the bacon Chuck in the carrots celery and onion season and then the leaks give it a stir and then wash and chop up some potato leaving on the skin when the veg is reduced by 2/3 fry the bacon until crispy add a few knobs of butter and stir remove some to garnish pop the bacon in the pan add chicken stock and blend throw in the potato top it up with stock and cook for 30 minutes after half an hour blend again season and serve with a little drizzle of cream garnish with your bacon and a drizzle of extra virgin olive oil so give it a try and I’ll see you next time
