Just joined the sub to ask,does my ciabatta look right? I wasn’t sure how it turned out. I made two loaves yesterday,cut into the first one(3rd pic)straight out of the oven (couldn’t resist 😅) and thought it was a total fail. I saved the second one for today though (4th pic), and now I’m not so sure. What do you think?

Another point is, I baked these on a pizza stone yet they were still pale underneath (I didn’t take a pic of it unfortunately) is this normal?

    That crumb looks pretty solid for a first attempt! Ciabatta is supposed to have those bigger irregular holes so you’re definitely on the right track

    For the pale bottom – yeah that’s super common with pizza stones, especially if it wasn’t preheated long enough. Next time try cranking the oven a bit higher or letting that stone heat for like an hour before baking. Some people also put the stone on a lower rack to get more bottom heat

    Cutting into hot bread is basically a rite of passage lol, we’ve all been there

The pale bottom thing is super common with pizza stones – try cranking the oven temp higher or putting the stone lower in the oven next time. Also don’t cut into bread right out of the oven lol, it needs like an hour to finish cooking internally even after you pull it out

    For the pale bottom – try cranking your oven higher and maybe get that stone really blazing hot before you put the dough on. Some people also use a cast iron pan instead of a pizza stone for better heat transfer

    Looks pretty solid for a first attempt! The crumb structure in that second loaf is actually not bad at all – you can see some decent holes forming which is what you want with ciabatta

    As for the pale bottom, that’s super common with pizza stones. Try preheating it longer (like 45-60 mins) or crank the oven temp up a bit more. Some people also put their stone on a lower rack to get more bottom heat

    Don’t stress too much about the one you cut early – we’ve all been there lol. The second one definitely shows you’re on the right track
