This creamy, umami spinach chickpea and lentil stew packs a nutritious punch.

You’ll need:
1 red onion
3 cloves of garlic
1 tsp ghee — @OssaOrganic
1/4 tsp turmeric
1/4 tsp cumin seeds
Oregano, parsley or dill
Umami stock
Chickpeas — @boldbeanco8980
Lentils
Peas
Handful of spinach
Toasted cashew nuts
2 tbsp plain yoghurt — whatever you fancy

Method:
Chop your onion, grate your garlic, and fry them on a medium heat with some ghee. Allow to soften for 3-5mins and then add your spices, letting them warm before pouring in your legumes. After 1 minute add your stock and herbs to the pan.

After 10mins add your peas to the pan, let it cook for 5mins before turning it off and adding the spinach.

Top with yoghurt and toasted cashews for a lovely crunch.

Hello everybody and welcome back to the late night cooking show. The cooking show that nobody has asked for and yet here I am here once again starving with an empty fridge. We are going to be making a little kind of herby spinachy chickpea situation because there’s one thing that this girl always has and that is beans. Beans. Wonderful beans. I’ve cut my onions. I’ve got my garlics ready to be grated. I’m going to melt some ghee and get those things on frying and doing their thing. So, I’ve potted my peas and I’m just going to make my stock. [Music] Oh, this smells so good. Onions and garlic are frying. I’m going to add some turmeric and some cumin seeds in. And I’ve warmed up the spices. And now I’ve added my lentils and the chickpeas, my stock, and I’ve also got a little bit of fresh herbs. So I’ve got oregano, but that’s only because that’s what I’ve got. I think parsley, dill will be really nice. Um, spring onions, whatever you’ve got. This has reduced really nicely. It’s been cooking for about 10 minutes, so I’m going to add my peas to cook for a little bit longer. And then I’m going to add my spinach. This is really really I just love when a throw together meal comes together nicely and this is tasting absolutely divine. A little bit of cream or coconut milk, whatever you’ve got would be delightful. I’m looking at my fridge and we are giving single broke but she’s into hell. I have slightly burned my nuts, but listen, worst things have happened to me. I’ve dished up my lentil chickpea situation. Um, we love a situation. We don’t love a situationship, but we do love a situation. Let’s make that clear. Little bit of yogurt because I think that it will just be perfect with this. And I’m definitely going to add a little bit of that uh crowd. So, I’ve got a beetroot crowd here. This to me looks perfect. If you have a naan bread, anything like that. Let’s dive in.
