Making my Southwest Turkey( in this case ground chicken) pasta. I also used Cashew Cream and vegan cheese instead of the heavy cream. This is very customizable.
A cozy, one-pot dinner packed with lean protein, veggies, and bold flavor.
📝 Ingredients:
1 tbsp canola oil
1 lb lean ground turkey
2 tsp kosher salt, divided
3 tsp ground cumin, divided
1 tsp oregano
1½ tsp black pepper, divided
¼ tsp crushed red pepper flakes
1 medium onion, diced
½ cup red bell pepper, diced
3 garlic cloves, minced or pressed
1 (10 oz) can diced tomatoes w/ green chiles
1 tsp chili powder
10 oz dry penne pasta
3 cups chicken broth
¼ cup heavy cream
4 cups baby spinach (2 big handfuls)
½ cup shredded Monterey Jack cheese
Chopped cilantro, for garnish

👩🏾🍳 Directions:
1️⃣ In a large pot or Dutch oven, heat oil over medium-high.
Add turkey, 1 tsp salt, 1½ tsp cumin, oregano, ½ tsp black pepper, & red pepper flakes. Cook 5 min, breaking it up.
2️⃣ Add onion, bell pepper, and garlic. Cook 5 more min, until veggies soften and turkey browns.
3️⃣ Stir in tomatoes, remaining salt, cumin, pepper, and chili powder.
4️⃣ Add dry pasta and broth. Bring to boil, then simmer covered for ~8 min, until pasta is tender.
5️⃣ Stir in cream and spinach. Cook until wilted. Top with cheese and let it melt.
6️⃣ Finish with fresh cilantro. Enjoy!
