Have you ever tried making orecchiette?

Lately, I’ve been completely hyperfixated on this shape ….maybe it’s the delicious broccoli rabe that’s in season right now.

It’s one of the simplest pastas to make….all you need is semola, water, a wooden board, and a knife. That’s it.

There’s something so relaxing about slowly dragging each piece across the board, feeling the dough transform under your fingers, and watching those little crevices form …..perfect for catching sauce.
They’ll never be perfect… but that’s the beauty of orecchiette …..they’re imperfectly perfect 😍
