Ingredients

For the Bread:

2 cups all-purpose flour
1 teaspoon baking powder
Β½ teaspoon salt
1 cup sugar
1 tablespoon orange zest
Β½ cup buttermilk
Β½ cup canola oil
Β½ cup orange juice
2 large eggs
1 teaspoon vanilla extract
1 Β½ cups fresh cranberries

For the Glaze:

1 cup powdered sugar
2–3 tablespoons orange juice

Instructions:

1. Preheat oven to 350Β°F and grease a 9×5-inch loaf pan.
2. In a bowl, whisk together flour, baking powder, and salt.
3. In another bowl, mix sugar and orange zest until fragrant.
4. In a large bowl, whisk buttermilk, oil, orange juice, eggs, and vanilla. Stir in dry ingredients and orange sugar until just combined.
5. Fold in cranberries, then pour batter into the loaf pan.
6. Bake 65–75 minutes or until a toothpick comes out mostly clean. Cool for 10–15 minutes before transferring to a rack.
7. For the glaze, whisk powdered sugar and orange juice until smooth. Drizzle over cooled bread before slicing.
