Florida’s first official “barlour,” Tipsy Scoop, a liquor-infused ice cream parlor, is gearing up to open in the heart of downtown Pensacola at 11 a.m. on Nov. 15.

While the New York-based franchise has been in business since 2014 under founder and CEO Melissa Tavss, the Pensacola shop at 194 N. Palafox St. will be the first of its Florida footprint, locally owned and operated by Pensacola natives Tony Linberg and Piyaporn “Jen” Lindberg.

The menu will be consistent with Tipsy Scoop’s existing locations, serving colorful flight boards, ice cream cocktails and stacked sundaes. However, Pensacola’s store will get an exclusive flavor representing the Sunshine State — Blue Chair Bay Spiked Key Lime Pie ice cream.

The menu is filled with interesting flavors, ranging from the decadent dark chocolate whiskey salted caramel ice cream to the refreshing mango margarita sorbet infused with tequila and orange liqueur.

The company takes pride in making its desserts look as good as they taste, with picturesque garnishes and keepsake sundae glasses.

“One of the big things that attracts people to Tipsy Scoop is the Instagram-worthy items, such as our cool-looking sundae glasses, which you actually get to keep once you order them,” Tony said. “We also do Tipsy Scoop flights of ice cream, which you can mix and match and make it your own.

While you do have to be 21+ to order one, even the giant, stacked sundaes are only equivalent to about two beers, according to Tony.

Among the most popular are the tequila sunrise sundae, described as “a summer day in a glass,” layered with sorbet scoops and topped with candy garnishes.

However, if you want to experience all the flavors without the liquor, you can still opt for some of the kids’ or mocktail flavors that come without any alcohol added, such as their spin on an Amalfi Spritz, Salty Mocktail Margarita or Virgin Pina Colada ice cream.

Jen said after visiting Tipsy Scoop’s home base in New York, they were hooked, and immediately knew it was that special something they could bring home to Pensacola.

“This is something completely new. We don’t have anything like this in the area, especially in Pensacola; there’s nothing like us,” Jen said. “Everybody loves ice cream and alcohol, so why not.”

Finding the right location was important, though, so they searched for about a year before their new downtown shop became available, sandwiched between an upcoming boutique called Monkee’s and the former Palafox House event venue (which has since been redeveloped as Petit Ami Event Venue, a sister venue to The Sanctuary).

The two are excited to be part of the busy downtown Pensacola community soon, and hope for a big turnout on opening day. To help build excitement, Tipsy Scoop Pensacola will be dishing out $1 scoops to the first 25 people in line. Visitors can register to the grand opening celebration for free on Eventbrite.

“We’re hoping to see pretty much everybody in Pensacola come check us out,” Tony said. “We do expect lines to be down the sidewalk. But essentially, we’re just excited.”
