I humbly submit canoli dip. First up, to make the dip, in a medium bowl, we are combining 4 oz of marcapone cheese, 4 oz of ricotta. To this, we’re going to add half a teaspoon of kosher salt, 1/4 teaspoon of ground cinnamon. An optional, but I think very necessary, 2 tbsps of amordo, and half a cup of sifted powdered sugar. Then, optionally, you can add 1/3 of a cup of your preferred canoli mixins. I like miniature chocolate chips. Now, making canoli dough from scratch is a bit of a fussy affair. A great workaround for something like canoli dip, I found, is frozen wonton wrappers. Once they are defrosted and patted dry, you can cut them into decorative shapes. And then, just like you would real canoli dough, deep fry them at 360° Fahrenheit for 2 to 3 minutes, flipping once halfway through. Likewise, we’re going to drain those on paper towels to keep them crisp. Optionally, adorn our canoli filling with extra miniature Choco Chipos. Surround with our tender, crispy canoli chips. Serve up and watch them disappear. You could also dust these with powdered sugar if you want to class up your Italian chips and salsa dessert, but I think they’re plenty pretty just as is.
