
(Yes some are peppers but the majority is tomatoes). While frost isn't in the forecast yet all next week is supposed to be in the 50s and overcast. So I figured it's unlikely they would ripen. Some are so green idk if they will turn at all. So salsa verde and pickled it is. I may try and roast some too

Let them ripen slowly the nicest of them and eat fresh for months. Just check them daily. We roast a bunch at a time when we have a lot ready and ripe at once.
Salsa Verde sounds excellent! I’m going to enjoy them as they ripen, and freeze what I can’t eat. Lots of sauces & soups this winter!
Just did a late night grabbed in the dark with a flashlight trying to get as much as I could as the first possible frost is coming at like 1-3am! Boooo. So many full green that I just can’t even get inside. Just too much.
