This quick and easy Herby Tomato & Butter Bean Salad celebrates the best of the season with juicy, sweet seasonal tomatoes, creamy butter beans, briny olives, and fragrant herbs – all brought together with a garlicky vinaigrette that we shook up in our reused Mr Organic jar!

INGREDIENTS
1 jar Mr Organic Butter Beans
2 tbsp Mr Organic Organic Extra Virgin Olive Oil, drained
150g colourful cherry tomatoes, halved
1/2 cucumber, cubed
100g green olives, halved
1 tbsp maple syrup
1 tbsp white wine vinegar
Juice 1 lemon
1 clove garlic, minced
Sea salt & black pepper
Handful fresh chives, chopped
Handful fresh parsley, chopped
Handful fresh basil + more to garnish
METHOD
1. Place the cherry tomatoes, cubed cucumber, green olives and drained Mr Organic Butter Beans in a bowl and toss to combine.
2. Make the dressing in the empty Butter Bean jar by adding in the Mr Organic Extra Virgin Olive Oil, maple syrup, white wine vinegar, lemon juice, garlic, salt and pepper, and shake well to combine.
3. Pour the dressing over the salad, then add on the chopped fresh chives and parsley, then pick the basil leaves over the top, turn everything well to coat and serve with more fresh basil leaves scattered as a garnish – enjoy!
