I made a Banoffee pie this weekend and wanted to share it with you all.
It’s a classic British pie, but here in Brazil we usually make it with dulce de leche instead of toffee.
Layers:
• Biscuit crust made with Lotus-style cookies
• Thick dulce de leche (I used cooked sweetened condensed milk)
• Fresh banana slices
• Lightly sweetened whipped cream with powdered sugar and vanilla extract
• Cocoa powder dusting

Crust
– 450 g Lotus-style caramelized cookies
– 225 g melted butter
Filling
– Dulce de leche made from 2 cans of cooked sweetened condensed milk (or store-bought dulce de leche)
– 7 small ripe bananas
Cream
– 300 g heavy cream (or whipping cream — ~35–45% fat)
– 60 g powdered sugar
– 1 tsp vanilla extract
Topping
– Cocoa powder for dusting
1. Crust: Pulse cookies in a food processor until fine. Mix with melted butter, press into a 25 cm springform pan, and bake 20 min at 180 °C (350 °F). Let cool slightly, then refrigerate for 1 hour.
2. Dulce de leche: Cook the condensed milk however you’re used to or simply use store-bought dulce de leche.
3. Whipped cream: Beat cream, powdered sugar, and vanilla with a mixer until stiff peaks form.
4. Assemble: Spread dulce de leche over crust, layer banana slices, top with whipped cream, and dust with cocoa powder.
5. Chill: Refrigerate for at least 2 hours before serving.
