  1. Kofta kebab

    Kebab Recipe
    1lb lean ground beef
    1lb ground lamb
    1 Onion
    5 Garlic cloves
    Parsley
    1 cup parsley
    1/2 cup bread crumbs
    4 pods Cardamom
    1 tsp Allspice
    1 tbsp Cumin
    1/2 tbsp Sumac
    2 tsp salt
    2 tsp smoked paprika
    1/2 tbsp black pepper

    Toum Recipe
    1 cup garlic
    2 tsp kosher salt
    1/4 cup lemon juice
    3 cups neutral flavoured oil
    Ice cold water

    Instruction:
    -Blend onions garlic and parsley in food processor
    -add seasonings and blended aromactis to the meat
    -grind cardamom and all spice and add to mixture let marinade in the fridge up to overnight
    -follow skewers prep instructions if you’re using bamboo skewers
    -skewers meat and grill on pre heated oiled grill until cooked. Should take no more then 10-12 minutes

    -for the toum add garlic to ice cold water for 15 minutes this will cut the garlic intensity
    -pat garlic dry and blend in food processor with the salt.
    -scrape down sides of the food processor periodically until garlic is blended into a fine pulp/paste
    -add about a tablespoon or so of oil and let it blend for about 30 seconds
    -continuosly stream small amounts of oil into the mixture until it starts emulsifying alternating between the lemon juice and oil.
    -be sure to do this very slowly, it’ll take some time and patience to ensure it doesn’t split
    -serve in a pita with some veggies or with some rice!
