This one is a combination of an older recipe crossed with my honey-garlic butter zucchini from over the summer. It is FANTASTIC—perfect for the holidays, but also versatile & easy enough for anytime really 👌 Using @latourangellelife cooking oils to roast these babies & to make this mouthwatering compound butter. La Tourangelle oils are the only ones I use—simply the best quality out there!

For the sweets:
4 medium sweet potatoes, halved lengthwise
1 tbsp La Tourangelle Avocado Oil
1/2 tsp salt

For the butter:
4 tbsp unsalted butter, softened to room temperature
1 tbsp La Tourangelle Olive Oil
1 1/2 tbsp honey
4 cloves garlic, finely minced
1 1/2 tbsp finely chopped parsley
1/2 tsp salt
Pepper to taste

For the toppings:
1 1/2 tbsp toasted pine nuts
1 1/2 tbsp crumbled goat cheese
1 tbsp finely chopped parsley
Honey

1️⃣Preheat the oven to 450. Line a sheet pan with parchment paper and set aside.2️⃣Score the tops of the sweet potatoes, making a criss-cross pattern. Next, add the avocado oil to the sheet pan, brush to cover then sprinkle with 1/2 tsp salt. Place the sweet potatoes face down, brush the tops with a little oil and place in the oven for 22-25 minutes. Flip the sweet potatoes and cook for another 10 minutes.3️⃣While the sweet potatoes roast, make the butter. Add the butter, olive oil, honey, garlic, parsley, 1/2 tsp salt and pepper to a small bowl and mix to make a compound butter. 4️⃣Remove the sweet potatoes from the oven and add divide the butter between the sweet potatoes, gently spreading it on top of them with a spoon. Place the sweet potatoes back in the oven for 10-15 minutes, until the tops just begin to brown. 5️⃣Serve the sweet potatoes topped with a sprinkle of the pine nuts, goat cheese, parsley and a drizzle of honey.

To make these honey garlic butter sweet potatoes, we start out by scoring the tops and roasting them with a little oil and salt. While they roast, we make this delicious honey garlic compound butter with butter, oil, honey, and lots of garlic. Coat the sweet potatoes in the butter. Roast them once more.
