Carpaccio di carne salada del Garda

    Carne salada is a typical food of the Trentino area of the Dolomites (part of the Eastern Alps).

    Beef is cured using spices, herbs and salt. This used to be a way to preserve meats when there was no refrigerator.

    The meat is either served raw like carpaccio or bresaola (olive oil, parmesan and arugula, for example) or grilled. Either way, it’s really good.
