


My favorite part about this recipe is that the fat from the cheese drips down and collects at the bottom of the Dutch oven and deep fries the crust.
Well, most recipes emphasize a beautiful top crust, this recipe has an underside that slaps so hard.
Recipe: 100g starter 375g water 500g bread flour, cover it in cheese right before it goes in the oven. (Whatever variation of stretch and fold and whatever times you like to do is fine) 450 degrees covered 25 min, uncovered until ready
