Mamzana Recipe (From the Edirne Region) – Ingredients:
2 roasted eggplants
2 roasted red capia peppers
2–3 green chili peppers
1 medium-sized tomato (peeled)
A few sprigs of parsley
2 cloves of garlic
Olive oil
Vinegar (optional)
Salt & red pepper flakes
Optional: Garlic yogurt for topping
Preparation:
Finely chop all the vegetables and place them in a mixing bowl.
Crush the garlic with a pinch of salt and add it to the mixture.
Adjust the flavor with olive oil, red pepper flakes, salt, and optionally vinegar.
Serve as desired – optionally topped with garlic yogurt.

Mamzana ist eine traditionelle Vorspeise oder ein Salat, der vor allem zur Ägäis- und Mittelmeerküche gehört und aus gegrilltem Gemüse zubereitet wird. Nach Wunsch: Knoblauchjoghurt als Topping
Zubereitung:
Alle Gemüse werden fein gehackt und in eine passende Schüssel gegeben.
Der Knoblauch wird mit etwas Salz zerdrückt und zur Mischung hinzugefügt.
Mit Olivenöl, Chiliflocken, Salz und – je nach Geschmack – Essig abgeschmeckt.

2-3 adet yeşil sivri biber
1 adet orta boy domates(kabuğu soyulmuş)
İki tutam maydanoz
2 diş sarımsak
Zeytinyağ
Sirke(isteğe bağlı)
Tuz-pulbiber
Üzeri için istenirse sarımsaklı yoğurt
Tüm sebzeler ince ince doğranarak uygun bir karıştırma kabına alınır.
Sarımsak az tuzla ezilerek karışıma eklenir.
Zeytinyağ-pulbiber-tuz ve isteğe göre sirke ile tadı ayarlandıktan sonra arzuya göre servis edilir. Afiyet olsun. 💕
