
I wanted to experiment with a ramen that tastes like a classic French game dish, going all-in with French-Japanese fusion.
- Shoyu tare with red wine & lingonberry
- 8 hour poultry paitan
- Chashu of sous vide pheasant with thyme and rosemary
- Autumn salad of Brussels sprouts, enoki and roasted chestnuts
- Poached pear with lingonberry jam
- Pheasant fat, sesame oil, black sesame
- Served with an ice cold Pear & Yuzu Spritz, made from the pear poaching liquid
